Poussin is tender and succulent and makes a light, summery meat.  It's easy to cook and will roast in around 30 minutes, serving 1 - 2 people.  

We also sell spatchcock poussin, which can be easily grilled for fantastic results or, if you want to show off to your firends, it makes a great change to any barbecue.

All Gressingham poussin are bred on approved farms in Lannilis in Brittany, France, a part of the world that has made its name on the provision of exquisite cuisine.

The birds that Gressingham use are not just young, small chickens but a specific breed that grows slowly to a very low weight - this allows the flavour and meat to develop in a more natural way.
